It’s fresh, it’s colorful, and it comes together in about 15 minutes with zero heat required. Sweet mango, crisp cucumber, crunchy cashews, and three kinds of fresh herbs all get tossed in a punchy sesame lime dressing that you’ll want to put on everything.
This is perfect for the waning days of summer, peak produce, and when turning on the oven feels like a personal offense. I needed something that felt special but didn’t require much effort, and this salad checked every box. It’s the kind of dish that looks like you spent way more time on it than you actually did – which is always a win. What You’ll Need for This Thai Mango SaladThis salad is all about fresh, ripe ingredients – so let’s talk about a few that are worth paying attention to before you start chopping.
Mango – You want ripe mangoes here. Ripe means they give just slightly when you press them and smell sweet near the stem. Underripe mango is too firm and tart, and it won’t give you that juicy sweetness that makes this salad work. Cut them into strips or bite-sized chunks – either way works great.
Fresh herbs – Don’t skip the herbs. The combination of fresh mint, fresh cilantro, and Thai basil is what gives this fresh mango salad its signature flavor. Thai basil has a slightly spicy, anise-like flavor that’s different from regular basil, but if you can’t find it, regular basil chiffonade works just fine.
Cashews – Lightly salted and roughly chopped. They add crunch and a little richness that balances all the bright, acidic flavors in the dressing. Toast them in a dry pan for a couple of minutes if you want to take the flavor up a notch. You can also use peanuts or macadamia nuts, too.
Jalapeño or Thai red chili – This is where your heat comes from. Thai chilies are spicier, jalapeño is milder. Both work – just taste as you go and adjust based on how much heat you like. Fish sauce – This is a small amount but it matters. It adds a savory depth that you can’t quite replicate with anything else. If you need to keep this vegan, skip it or swap in a tiny splash of soy sauce instead.

Tips for the Best ResultsUse the ripest mango you can find. This is the star of the show. A mango that’s just barely ripe won’t have the sweetness or the soft, juicy texture that makes this salad so good. If yours aren’t quite ready, leave them on the counter for a day or two. Green mango salad is also an option, but just know unripe mango won’t have the same soft texture, or the sweetness.
Slice everything thin and uniform. The reason this salad looks so beautiful is because of the way the ingredients are cut. Thin strips and matchsticks mean every bite has a little bit of everything. A sharp knife makes this so much easier. Or you can use a mandolin with a julienne attachment blade. Adjust the sizing to your desired size of strips. This is great for mango and cucumber, or slicing the shallots.
Don’t dress it until you’re ready to eat. The lime juice will start to break down the mango and release liquid, which makes the salad watery. If you’re prepping ahead, keep the dressing in a jar and the salad in the fridge separately until right before serving.
Taste the dressing before you pour. Everyone’s lime and soy sauce has slightly different intensity. Whisk it together, taste it, and trust your instincts. A little more honey, a little more lime – make it yours.

Frequently Asked QuestionsCan I make this salad ahead of time? Yes, with one rule – keep the dressing separate. You can chop and prep everything and store it in the fridge for up to a day ahead. Just wait to toss it with the dressing until right before serving.
What if I can’t find Thai basil? Regular basil works just fine. Chiffonade it the same way and it will still be delicious. The flavor is a little different but it’s still fresh and bright.
Can I make this vegan? Absolutely. Just swap the fish sauce for an extra splash of soy sauce, and use maple syrup instead of honey. All the other ingredients are already plant-based.
What kind of mango works best? Ataulfo mangoes (sometimes called honey mangoes) are my top pick – they’re sweet, less stringy, and have a creamy texture. Tommy Atkins are the most common and work well too. Just make sure they’re ripe.
How spicy is this? With one jalapeño and seeds removed, it’s a mild-to-medium heat. If you want more heat, keep some seeds in or swap for a Thai red chili. If you want it mild, use less or skip the chili altogether.
How to Store It
This salad is best eaten the day it’s made, especially once it’s dressed. If you have leftovers, store them in an airtight container in the fridge for up to one day. The mango and cucumber will release some liquid as they sit, so give it a good toss before eating and know that the texture won’t be quite as crisp. It still tastes great though.
